Traditional way 🎎

1. step — Preparation

Junbi (準備)

  1. Japanese Matcha — Ceremonial
  2. Tea Bowl — Chawan
  3. Bamboo Whisk Chasen
  4. Bamboo Scoop — Chashaku
  5. Sifter — Chakoshi
  6. Tea Cloth — Chakin

Soak the chasen in warm water. The prongs will become softer and more flexible, ensuring longer durability and easier whisking.

2. step — Measurement

Keiryō (計量)

  1. Place the chawan in front of you.
  2. Place chakoshi on top of the chawan
  3. Using a chashaku, scoop 2 teaspoons of matcha and pour it into the chakoshi

You can adjust the amount of matcha to your taste.

3. step — Sifting

Koshiru (漉しる)

  1. Place the chashaku in the center of the chakoshi
  2. Using circular motions, sift all the matcha with the chashaku
  3. Clean the chashaku by wiping it with the chakin

A smooth texture is key to whisking a fine foam that ensures a creamy taste.

4. step — Pouring

Soshīru (注ぐ)

  1. Heat the water to a maximum of 75°C
  2. Pour 70 ml of water into the chawan with sifted matcha

The water temperature is crucial for preserving both the flavor and the beneficial nutrients.

5. step — Whisking

Awatateru (泡立てる)

  1. Place the chasen in the center of the chawan
  2. Move it quickly in the "W" motion
  3. Whisk until a thick foam forms

When whisking, the movements should come from the wrist, and the chasen should not touch the bottom of the chawan. This ensures a thicker foam and extends the whisk’s lifespan.

6. step — Savoring

Tanoshimu (楽しむ)

  1. Hold the chawan with both hands.
  2. Pause for a moment to appreciate the aroma and color.
  3. Bring the chawan to your lips and take a sip.
