Sift 1 teaspoon of ceremonial-grade matcha into a saucepan over a double boiler with 1 tablespoon of cream. Whisk until all the lumps disappear.
Add 3 more tablespoons of cream and the white chocolate. Stir until all the chocolate has melted.
Remove from the heat and stir occasionally while you prepare the rest of the recipe.
In a large bowl, whip the remaining cream with a little vanilla extract until stiff peaks form.
Gently fold the white chocolate and matcha mixture into the whipped cream in batches.
Divide the prepared chocolate mousse into 4 glasses. Chill in the fridge for 2 hours, and serve with whipped cream, chocolate shavings, or fresh fruit.
